Keeping One’s Sanity—and One’s Health—During the Holiday Season Mise en Place Comes to Green Mountain

Ludlow, VT, October 14, 2006. Many cooks are familiar with the French philosophy of mise en place, the ”setting in place” of all necessary ingredients and cooking utensils before preparing a recipe. As the Thanksgiving and Christmas holidays approach, Green Mountain at Fox Run in Ludlow, Vermont, will offer unique week-long programs beginning November 12, 2006, and running through December 6, to help guests prepare ahead of time for the hectic challenges of shopping, entertaining, and the mounds of food that accompany the holiday season each year. The program will provide an exercise plan that will fit into a busy holiday schedule; the opportunity to cook family favorites healthfully without sacrificing flavor; and practical advice on how to navigate through that tough holiday terrain, when family and friends unintentionally (or intentionally) sabotage one’s best intentions to stay healthy and fit during what should be a joyous season.
Green Mountain at Fox Run is the country’s oldest all-women’s weight loss program; it offers a serious alternative to dieting by focusing on helping women develop healthy lifestyle behaviors. For 35 years, staff have been teaching women of all ages about strategies that include understanding when one is truly hungry or full, enjoying real meals (not shakes or “diet” meals), participating in a physical activity program that features everything from water aerobics to kick-boxing, and recognizing that real women don’t necessarily look like those on the pages of fashion magazines.
