After graduation, his first john was at the Colony Beach and Tennis Resort, where he worked his way up from stock boy to waiter to banquet director. Eventually, he left to start his own catering company, but his friendship with Michael Klauber endured. Phil mentioned to Michael how he had a growing list of clients, but no kitchen to work in. Michael’s response? “Why don’t you use my kitchen?” The rest is, simply, history.
"Philip is truly a phenomenon," said co-proprietor Michael Klauber. "He can handle everything from an intimate candlelight dinner for two to a black-tie dinner for 1,000 or more. I've seen him coordinate 10 separate events on a single day. What's really remarkable, when you consider the number of events he handles, is that each one is wonderfully unique, with its own personality and style."
