Free Tacos, Charitable Donations, Highlight Jimboy's Grand Re-opening in Folsom

The Jimboy's Tacos location at 708 E. Bidwell in Folsom has just completed a remarkable transformation into a Mayan-themed restaurant complete with a beautiful new outdoor dining patio. While the restaurant itself has a very distinctive new look featuring lots of creatively used rock, the menu at Jimboy's will maintain the same food that has won legions of avid fans for nearly 60 years.

To celebrate the grand re-opening of the Folsom Jimboy's, the outlet will be giving away two of their legendary ground beef tacos free to every person who stops by between 11:30am and 7:30pm on Saturday, February 25th. While the tacos will be served free with no strings attached, Jimboy's management has arranged for 100 percent of any optional donations made during this day-long celebration to go directly to the St. Jude Children's Hospital.

Radio stations KNCI and 107.9 The End will also be on hand to promote the festivities. Besides the free tacos, guests will be able to register for a variety of free prizes including ski lift tickets, movie passes, t-shirts and more.

"We're very proud of this store", said Karen Freeman, President of Jimboy's Tacos, Inc. "We think our loyal customers will like what we've done and we're hoping to attract lots of new folks, too. We're very happy to be able to benefit a great organization like St. Jude Children's Hospital as well. We'd like to invite everyone out for a great time."

The unique building design is seen as a way to attract more people to Jimboy's, not just in Folsom but all locations. "We do have a large and loyal following", said Freeman, "but there are some people who still don't realize we are not a typical "fast food" restaurant. We use fresh local ingredients, including only top grade local beef and chicken. Our menus are prepared fresh daily, cooked slow and served fast. We hope that our Grand Re-opening event will encourage even more people to give us a try. Once they do, our bet is they'll be back."

The Jimboy's Taco phenomenon was begun by Freeman's parents, Jim and Margaret Knudson. In 1954, Jim Knudson converted a 16-foot trailer into a mobile kitchen and opened for business at King's Beach in Lake Tahoe. The reputation of Jimboy's quickly spread and today there are over 40 locations in California and Nevada. A tribute to the original "Jimboy" can be seen in photos prominently displayed inside the newly remodeled Folsom store. The vintage photos serve as a poignant reminder of the success of a chain born of one man's love of tacos.
